Hey everyone! I just wanted to share one of my favorite side dishes that’s super simple yet so flavorful—Greek Lemon Rice! It’s perfect with grilled chicken, fish, or just on its own. Here’s how I make it:

- 1 cup long-grain white rice (basmati works great too!)
- 2 cups chicken or vegetable broth (for extra flavor)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and pepper, to taste
- A handful of fresh parsley, chopped (optional, but it adds a nice freshness!)
- Heat the olive oil in a medium-sized pot over medium heat. Add the onion and garlic, and sauté until they’re soft and fragrant.
- Stir in the rice and let it toast for a minute or two—this gives it a nice nutty flavor!
- Pour in the broth, lemon juice, lemon zest, oregano, and a pinch of salt and pepper. Give it a good stir.
- Bring everything to a boil, then lower the heat, cover the pot, and let it simmer for about 15 minutes (or until the rice is cooked and the liquid is absorbed).
- Once it’s done, fluff it with a fork, toss in the parsley if you’re using it, and adjust the seasoning if needed.
