- 2 lbs pork shoulder, cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 lb roasted green chilies, chopped
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
- Brown the Pork:
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the cubed pork shoulder and cook until browned on all sides. Remove and set aside.
- Sauté Vegetables:
- In the same pot, add the chopped onion and cook until translucent.
- Add the minced garlic and cook for another minute.
- Combine Ingredients:
- Return the browned pork to the pot.
- Add the roasted green chilies, chicken broth, diced tomatoes, ground cumin, oregano, salt, and pepper.
- Stir well to combine.
- Simmer:
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and let it simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
- Serve:
- Serve hot, garnished with fresh cilantro and lime wedges if desired.
