- 1 cup green lentils, rinsed and drained
- 3 cups vegetable or chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tablespoon olive oil
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish, optional)
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, diced carrot, and diced celery. Sauté until vegetables are softened, about 5-7 minutes.
- Add Lentils and Spices: Stir in green lentils, bay leaf, dried thyme, salt, and pepper. Cook for 1-2 minutes, stirring frequently, to toast the lentils and spices.
- Cook Lentils: Pour in vegetable or chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until lentils are tender and most of the liquid is absorbed.
- Serve: Remove bay leaf. Taste and adjust seasoning if needed. Garnish with chopped fresh parsley or cilantro, if desired. Serve hot as a side dish or as a main meal.
