Instructions:​

  1. Prepare the chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a grill pan or skillet over medium-high heat. Grill the chicken breasts for about 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from heat and let them rest for a few minutes, then slice them into thin strips.
  2. Prepare the salad: In a large bowl, combine the mixed salad greens, sliced avocados, cherry tomatoes, and red onion. If using, sprinkle the crumbled feta cheese and chopped cilantro or parsley over the salad.
  3. Make the dressing: In a small bowl, whisk together the Dijon mustard, honey, and vinegar until well combined. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Season with salt and pepper to taste.
  4. Assemble the salad: Pour the honey mustard dressing over the salad and toss gently to coat the ingredients evenly.
  5. Serve: Divide the salad onto plates or bowls. Top each portion with sliced grilled chicken. You can drizzle a little extra dressing over the chicken if desired. Serve immediately and enjoy!
