Hey everyone! Thought I’d share my favorite recipe for a Grilled Chicken Caesar Salad—it’s perfect for a light yet satisfying meal. I think the char on the chicken really makes it pop, and homemade dressing? Total game-changer. Let me know if you try it or tweak it!

- 2 romaine hearts, chopped
- 2 grilled chicken breasts, sliced (seasoned with salt, pepper, and a dash of paprika)
- 1 cup croutons (store-bought or homemade—your call!)
- 1/4 cup grated Parmesan cheese
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- Juice of 1 lemon
- 1/4 cup olive oil
- 2-3 anchovy fillets, minced (optional, but worth it!)
- Salt and pepper to taste
- Season and grill the chicken until juicy and golden, then let it rest for 5 minutes before slicing.
- Whisk together all the dressing ingredients until smooth. Taste and adjust seasoning.
- In a large bowl, toss the romaine with half the dressing. Add the chicken, croutons, and Parmesan.
- Drizzle the remaining dressing on top, toss lightly, and serve immediately.
