Grilled Chicken Caesar Salad Recipe

Hey everyone! Thought I’d share my favorite recipe for a Grilled Chicken Caesar Salad—it’s perfect for a light yet satisfying meal. I think the char on the chicken really makes it pop, and homemade dressing? Total game-changer. Let me know if you try it or tweak it! 😊

Ingredients:
For the salad:

  • 2 romaine hearts, chopped
  • 2 grilled chicken breasts, sliced (seasoned with salt, pepper, and a dash of paprika)
  • 1 cup croutons (store-bought or homemade—your call!)
  • 1/4 cup grated Parmesan cheese
For the dressing:

  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 2-3 anchovy fillets, minced (optional, but worth it!)
  • Salt and pepper to taste
Instructions:

  1. Season and grill the chicken until juicy and golden, then let it rest for 5 minutes before slicing.
  2. Whisk together all the dressing ingredients until smooth. Taste and adjust seasoning.
  3. In a large bowl, toss the romaine with half the dressing. Add the chicken, croutons, and Parmesan.
  4. Drizzle the remaining dressing on top, toss lightly, and serve immediately.
