- 2 large eggplants
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Prepare the Eggplant: Slice the eggplants into ½-inch thick rounds. Sprinkle them with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.
- Marinate: In a bowl, mix together the olive oil, balsamic vinegar, minced garlic, oregano, thyme, salt, and pepper. Brush both sides of the eggplant slices with the marinade.
- Grill: Preheat your grill to medium-high heat. Place the eggplant slices on the grill and cook for about 4-5 minutes per side, or until they are tender and have nice grill marks.
- Serve: Remove the eggplant from the grill and let it cool slightly. Serve warm, garnished with fresh herbs or a squeeze of lemon juice if desired.
