Ingredients:​

For the Lobster Tails:​

  • 4 lobster tails
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, cut into wedges (for serving)

For the Garlic Butter Sauce:​

  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Instructions:​

  1. Prepare the Lobster Tails:
    • Using kitchen shears, cut along the top of each lobster tail, starting from the base and cutting all the way to the tip. Gently lift the meat from the shell, keeping it attached at the base, and spread it slightly. This will help the meat cook evenly and get a nice char.
  2. Season the Lobster Tails:
    • In a small bowl, mix together the olive oil, paprika, garlic powder, dried oregano, onion powder, salt, and black pepper. Brush this mixture over the lobster meat and into the crevices.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash. For a gas grill, heat it to around 400°F (200°C).
  4. Grill the Lobster Tails:
    • Place the lobster tails flesh-side down on the grill. Close the lid and grill for about 5-6 minutes. Flip the tails so the flesh-side is up, and continue to grill for an additional 4-6 minutes, or until the meat is opaque and has nice grill marks. The internal temperature should reach 140°F (60°C).
  5. Make the Garlic Butter Sauce:
    • While the lobster is grilling, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for about 1-2 minutes until fragrant. Stir in the fresh parsley, lemon juice, and red pepper flakes if using. Remove from heat.
  6. Serve:
    • Remove the lobster tails from the grill and brush with some of the garlic butter sauce. Serve with additional sauce on the side and lemon wedges for squeezing over the top.

Tips:​

  • For Extra Flavor: You can marinate the lobster tails in the olive oil mixture for about 30 minutes before grilling.
  • Avoid Overcooking: Lobster tails cook quickly, so keep an eye on them to avoid overcooking, which can make the meat tough.
