- Preheat your grill to medium-high heat.
- Scrub the oysters under cold running water to remove any dirt or debris from the shells.
- Using an oyster knife, carefully shuck the oysters, discarding the top shell and loosening the oyster from the bottom shell.
- In a small bowl, mix together softened butter and minced garlic. You can also add a splash of hot sauce for extra flavor if desired.
- Place the shucked oysters on the grill, flat side down, and cook for about 2-3 minutes until they start to bubble and the edges curl slightly.
- Carefully spoon a small amount of the garlic butter mixture onto each oyster.
- Close the grill lid and continue cooking for another 2-3 minutes, or until the oysters are cooked through and the butter is melted and bubbly.
- Using tongs, carefully remove the grilled oysters from the grill and transfer them to a serving platter.
- Garnish with chopped parsley and serve immediately with lemon wedges and a side of rock salt for dipping.
