Grilled Squid with Basil Pesto
Ingredients:
- 1 lb squid, cleaned and cut into rings
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup fresh basil leaves
- 1/4 cup pine nuts (or walnuts)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- Juice of 1 lemon
- Lemon wedges for serving
- Preheat your grill or grill pan over medium-high heat.
- In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, lemon juice, and half of the olive oil. Blend until smooth. Drizzle in the remaining olive oil while blending until well combined.

- Grill the squid for about 2-3 minutes on each side until cooked through and slightly charred.
