Ingredients:
- 4 grouper fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1/2 cup white wine (optional)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon capers, drained
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Fish:
- Season the grouper fillets with salt and pepper. Drizzle with 1 tablespoon of olive oil and set aside.
- Prepare the Sauce:
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the diced tomatoes (with their juices), white wine (if using), dried oregano, dried basil, and red pepper flakes (if using).
- Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
- Stir in the capers and half of the chopped parsley.
- Bake the Fish:
- Place the seasoned grouper fillets in a baking dish.
- Pour the chunky tomato sauce over the fillets, making sure they are well-coated.
- Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- Serve:
- Remove the baked grouper from the oven.
- Sprinkle with the remaining fresh parsley and grated Parmesan cheese, if using.
- Serve immediately, with your choice of sides such as pasta, rice, or a fresh green salad.
Tips:
- For an extra burst of flavor, you can add a splash of balsamic vinegar to the tomato sauce.
- If you prefer a smoother sauce, you can blend the tomato mixture before adding it to the fish.
