- 1 lb ground lamb or beef (or a mixture of both)
- 1 small onion, grated
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/2 cucumber, peeled, seeded, and grated
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- Pita bread
- Sliced tomatoes
- Sliced red onion
- Chopped lettuce
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground meat, grated onion, minced garlic, dried oregano, dried thyme, ground cumin, paprika, salt, and pepper. Mix well until everything is evenly combined.
- Transfer the meat mixture to a baking dish or loaf pan and press it down firmly to form a loaf shape.
- Bake the gyro meat in the preheated oven for 45-50 minutes, or until it is cooked through and nicely browned on the outside. Remove from the oven and let it rest for a few minutes before slicing thinly.
- While the meat is baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, salt, and pepper. Stir until well combined. Cover and refrigerate until ready to serve.
- To assemble the gyros, warm the pita bread in a dry skillet or microwave. Place a few slices of gyro meat on each pita bread, top with tzatziki sauce, sliced tomatoes, sliced red onion, and chopped lettuce.
- Fold the pita bread over the filling to form a gyro sandwich. Serve immediately and enjoy!
