Ingredients:
For the gyro meat:
  • 1 lb ground lamb or beef (or a mixture of both)
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
For the tzatziki sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber, peeled, seeded, and grated
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
For serving:
  • Pita bread
  • Sliced tomatoes
  • Sliced red onion
  • Chopped lettuce
Instructions:
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground meat, grated onion, minced garlic, dried oregano, dried thyme, ground cumin, paprika, salt, and pepper. Mix well until everything is evenly combined.
  3. Transfer the meat mixture to a baking dish or loaf pan and press it down firmly to form a loaf shape.
  4. Bake the gyro meat in the preheated oven for 45-50 minutes, or until it is cooked through and nicely browned on the outside. Remove from the oven and let it rest for a few minutes before slicing thinly.
  5. While the meat is baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, salt, and pepper. Stir until well combined. Cover and refrigerate until ready to serve.
  6. To assemble the gyros, warm the pita bread in a dry skillet or microwave. Place a few slices of gyro meat on each pita bread, top with tzatziki sauce, sliced tomatoes, sliced red onion, and chopped lettuce.
  7. Fold the pita bread over the filling to form a gyro sandwich. Serve immediately and enjoy!
