Hey everyone! I wanted to share one of my favorite breakfast recipes that never fails to kickstart my day with a burst of flavor and energy: Hearty Beefy Breakfast Burrito! It's a perfect blend of savory beef, fluffy eggs, and vibrant veggies all wrapped up in a warm tortilla. Here's what you'll need:

- 1/2 lb ground beef
- 4 large eggs
- 1/2 onion, diced
- 1 bell pepper, diced (any color you prefer)
- 2 cloves garlic, minced
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- Salt and pepper to taste
- Optional toppings: salsa, sour cream, avocado slices
- In a skillet over medium heat, cook the ground beef until browned and no longer pink. Use a spatula to break it into smaller pieces as it cooks. Once done, transfer the beef to a plate lined with paper towels to drain any excess grease.
- In the same skillet, add a bit of oil if needed, then sauté the diced onion, bell pepper, and minced garlic until softened and fragrant, about 5 minutes.
- Crack the eggs into the skillet with the veggies, season with salt and pepper, and scramble until the eggs are cooked to your desired consistency.
- Once the eggs are cooked, return the cooked ground beef to the skillet and mix everything together until well combined. Sprinkle the shredded cheddar cheese on top and let it melt slightly.
