Herb-Crusted Lamb Chops with Mint Yogurt Sauce
Ingredients:
- 8 lamb chops (about 1 inch thick)
- 2 tbsp olive oil
- 1 cup fresh breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh rosemary, chopped
- 2 garlic cloves, minced
- Salt and pepper, to taste
For the Mint Yogurt Sauce:
- 1 cup plain Greek yogurt
- 1/4 cup fresh mint leaves, chopped
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions:
- Prepare the Herb Crust: In a bowl, mix together the breadcrumbs, chopped parsley, rosemary, minced garlic, salt, and pepper.
- Season the Lamb Chops: Rub the lamb chops with olive oil and season generously with salt and pepper.
- Coat the Lamb Chops: Press each lamb chop into the herb mixture, coating both sides evenly.
- Cook the Lamb Chops: Heat a large skillet over medium-high heat. Add a bit of olive oil and cook the lamb chops for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness. Let them rest for a few minutes after cooking.
- Make the Mint Yogurt Sauce: In a bowl, combine the Greek yogurt, chopped mint, lemon juice, minced garlic, salt, and pepper. Mix well and adjust seasoning to taste.
