I prefer eating squash roasted. I cut it into cubes or wedges, and toss them with olive oil, salt, and my favorite spices (garlic, nutmeg, or cinnamon). Then, I roast them at 400°F (200°C) for about 25-30 minutes until tender and caramelized.
Sometimes, I eat it with fillings. In particular, I stuff it with cooked grains, veggies, and protein then bake until tender.
