Ingredients:


  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)

Instructions:


  1. Mix the Ingredients:
    • On a clean surface, mound the flour and make a well in the center. Crack the eggs into the well, add salt, and olive oil if using.
  2. Combine and Knead:
    • Using a fork, gently beat the eggs and gradually mix in the flour from the sides of the well. Once the dough starts to come together, use your hands to knead it. Knead the dough for about 8-10 minutes until it's smooth and elastic. If the dough is too sticky, add a bit more flour. If it's too dry, add a small amount of water.
  3. Rest the Dough:
    • Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes. This helps the gluten relax, making it easier to roll out.
  4. Roll Out and Cut:
    • After resting, divide the dough into manageable portions. Roll out each portion on a floured surface to your desired thickness. You can then cut it into your preferred pasta shapes, such as fettuccine, tagliatelle, or pappardelle.
  5. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta for 2-4 minutes, or until it reaches your desired level of tenderness. Fresh pasta cooks much faster than dried pasta, so keep an eye on it.
