  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup pineapple chunks

Instructions:

Step 1: Season the chicken pieces with salt and pepper.

Step 2: Dredge the chicken in cornstarch, then dip them in the beaten eggs.

Step 3: Heat vegetable oil in a pan over medium-high heat. Fry the chicken until golden brown and cooked through. Remove and set aside on a paper towel-lined plate to drain excess oil.

Step 4: In a separate pan, combine ketchup, rice vinegar, brown sugar, soy sauce, and the cornstarch-water mixture. Cook over medium heat until the sauce thickens.

Step 5: Add diced bell pepper, onion, and pineapple chunks to the sauce. Cook for a few minutes until the vegetables are tender yet still crisp.

Step 6: Add the fried chicken to the sauce and stir until evenly coated.

Step 7: Serve hot over steamed rice or noodles. Garnish with sesame seeds and chopped green onions if desired.
