Homemade Ube Ice Cream
Equipment:
- Ice Cream Tub
- Stand Mixer
- Mixing Bowls
- 1 10-oz can condensed milk
- 5 oz ube jam (see notes)
- 4 tsp ube extract (1 20-ml bottle)
- 1 tsp vanilla extract
- 2 cups heavy cream, whipped to medium/stiff peaks
- In a large bowl, stir together condensed milk, ube jam, ube extract, and vanilla extract until fully incorporated.
- Take a generous dollop of whipped cream and gently fold it into the ube mixture to lighten it.
- Gradually fold the lightened ube mixture into the remaining whipped cream until well combined.
- Transfer the mixture into a freezer-safe container, smooth the top, and cover with plastic wrap. Freeze overnight.
- Since ube jam forms the base of your ice cream, use one that you enjoy on its own. Homemade ube jam is recommended.
- Adjust the sweetness of your ice cream by adding the ube jam gradually until it reaches your desired level.
- Use heavy cream with a milk fat content between 36 and 40 percent for the best texture and consistency.
