Ingredients:
- 3 large beets
- 1 tablespoon olive oil
- 1 pinch salt
- 2 tablespoons honey
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Trim the stems and leaves from the beets and give them a good wash. Leave the skin on and cut the beets into chunks.
- Toss the beet chunks in olive oil and sprinkle with a pinch of salt. Spread them out evenly on the prepared baking sheet.
- Roast the beets in the preheated oven for 30 minutes.
- Remove the beets from the oven and drizzle with honey. Stir the beets with a wooden spoon to coat them completely with honey, then spread them back out on the pan.
- Continue roasting until the beets are tender, about 15 more minutes. Allow them to cool before serving.
