- Ground cinnamon, for garnish (optional)
- Rinse the rice under cold water until the water runs clear.
- In a blender, combine the rinsed rice, cinnamon sticks, and 2 cups of water. Blend until the rice and cinnamon sticks are broken down into a coarse mixture.
- Add the remaining 2 cups of water to the blender and blend again until well combined.
- Pour the rice mixture into a large bowl and let it sit at room temperature for at least 4 hours, or preferably overnight. This allows the flavors to meld and the rice to soften.
- After soaking, strain the rice mixture through a fine mesh sieve or cheesecloth into a pitcher, pressing down on the solids to extract as much liquid as possible.
