I keep my ice cream cake soft by taking it out of the freezer about 20 minutes before serving. I also slice it with a warm knife to make it easier to cut.
I've found that letting the ice cream cake sit at room temperature for about 5-10 minutes before slicing makes a huge difference. The advice really works! It allows the cake to soften just enough so that slicing becomes easier and the cake doesn't melt too quickly. Give it a try next time!
