This classic Mexican breakfast dish features eggs, salsa, and beans atop crispy tortillas, perfect for a fiesta on your plate. Check out the recipe below and get ready to add some south-of-the-border flair to your breakfast routine!
Ingredients:
- 4 corn tortillas
- 4 eggs
- 1 cup refried beans
- 1 cup salsa (homemade or store-bought)
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- Salt and pepper to taste
- Optional toppings: avocado slices, chopped cilantro, sour cream
Instructions:
1. Heat a skillet over medium heat and lightly toast the corn tortillas on both sides until they are slightly crispy. Set aside.
2. In the same skillet, cook the eggs to your desired doneness (fried, scrambled, or poached).
3. Heat the refried beans in a small saucepan until warmed through.
4. To assemble, spread a layer of refried beans onto each tortilla, then top with eggs, salsa, and shredded cheese.
5. Season with salt and pepper to taste, and garnish with optional toppings if desired.
