- 2 large potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 red bell pepper, diced
- 1 tomato, diced
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the cubed beef stew meat to the pot and brown on all sides.
- Stir in the Hungarian paprika, caraway seeds, and bay leaves, and cook for another minute to toast the spices.
- Pour in the beef broth and bring the soup to a simmer. Cover and cook for about 1 hour, or until the beef is tender.
- Add the diced potatoes, carrots, bell pepper, and tomato to the pot. Simmer for another 20-30 minutes, or until the vegetables are cooked through.
