I recently made Hungarian Pörkölt, and it was an incredible culinary journey! This traditional Hungarian stew is rich, hearty, and bursting with flavor, thanks to the generous use of paprika. It’s a comforting dish that’s perfect for cozy dinners. Here’s how you can make this delicious Hungarian Pörkölt at home:

Ingredients:

  • 2 lbs (900g) beef chuck or pork shoulder, cut into bite-sized cubes
  • 2 tablespoons lard or vegetable oil
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon hot Hungarian paprika (optional, for a spicier dish)
  • 1 bell pepper, diced
  • 1 large tomato, diced (or 1 cup canned diced tomatoes)
  • 1 cup beef broth or water
  • 1 teaspoon caraway seeds
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Sauté the Onions:

  • Heat the lard or vegetable oil in a large pot or Dutch oven over medium heat.
  • Add the finely chopped onions and sauté until they are golden and translucent, about 10 minutes.

2. Add the Garlic and Paprika:

  • Add the minced garlic to the pot and sauté for another 1-2 minutes until fragrant.
  • Remove the pot from the heat and stir in the sweet and hot paprika, mixing well to coat the onions and garlic. This step is crucial to release the paprika’s flavor without burning it.

3. Brown the Meat:

  • Return the pot to the heat and add the cubed meat, stirring to coat it with the paprika-onion mixture.
  • Cook the meat until it is browned on all sides.

4. Add Vegetables and Simmer:

  • Add the diced bell pepper, tomato, caraway seeds, salt, and black pepper to the pot.
  • Pour in the beef broth or water, ensuring the meat is just covered with liquid. Stir well to combine.

5. Cook the Stew:

  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.
  • Stir occasionally and add more broth or water if needed to keep the meat covered and prevent sticking.

6. Adjust Seasoning and Serve:

  • Taste the pörkölt and adjust the seasoning with more salt and pepper if needed.
  • Remove from heat and let it rest for a few minutes.

7. Garnish and Enjoy:

  • Serve the pörkölt hot, garnished with freshly chopped parsley.
  • This dish pairs beautifully with nokedli (Hungarian dumplings), boiled potatoes, or a slice of crusty bread.

Conclusion

Hungarian Pörkölt is a rich and flavorful stew that captures the essence of traditional Hungarian cuisine. The tender meat, aromatic spices, and hearty vegetables make this dish a perfect comfort food for any occasion. Whether you’re sharing it with family or enjoying it on a cozy evening, pörkölt is sure to satisfy your taste buds and warm your soul. Enjoy this taste of Hungary right at home! 🇭🇺🍲✨
