Ingredients:

For the Marinade:

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon Kashmiri red chili powder (or paprika)
  • Salt, to taste
For the Butter Chicken:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 can (14 ounces) crushed tomatoes
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh cilantro leaves, for garnish
For Serving:

  • Cooked basmati rice
  • Naan bread
Instructions:

  1. In a bowl, combine all the ingredients for the marinade. Add the chicken pieces and toss to coat. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, or up to overnight for maximum flavor.
  2. Heat vegetable oil in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened and translucent, about 5-6 minutes.
  3. Add minced garlic and grated ginger to the skillet, and cook for another 1-2 minutes until fragrant.
  4. Stir in ground cumin, ground coriander, turmeric powder, garam masala, ground cinnamon, ground cardamom, and ground cloves. Cook for another 1-2 minutes to toast the spices and release their flavors.
  5. Add crushed tomatoes to the skillet, stirring to combine. Cook the mixture for 5-6 minutes, stirring occasionally, until the tomatoes have thickened slightly.
  6. Stir in heavy cream and butter, stirring until the butter has melted and the sauce is smooth and creamy.
  7. Season the sauce with salt and pepper to taste.
  8. Add the marinated chicken pieces to the skillet, along with any marinade that has accumulated. Stir to coat the chicken in the sauce.
  9. Reduce the heat to low, cover the skillet, and let the chicken simmer for 15-20 minutes, or until cooked through and tender.
  10. Remove the skillet from the heat and garnish the butter chicken with fresh cilantro leaves.
  11. Serve the Indian-Inspired Butter Chicken hot, alongside cooked basmati rice and warm naan bread.
  12. Enjoy your flavorful and aromatic butter chicken, a delicious fusion of Indian flavors that will transport you to the bustling streets of Delhi with every bite!
