Hello everyone! Looking for a is a delightful and flavorful dish that combines a variety of vegetables with aromatic spices and creamy coconut milk or tomato-based sauce? I'm sharing here a versatile dish that can be adjusted to suit different tastes and preferences, it's one of my faves: Indian Vegetable Curry. Here's a basic recipe to serve 5 people:
Feel free to customize this recipe by adding other ingredients such as chickpeas, lentils, spinach, or squash. You can also adjust the consistency of the curry by adding more or less vegetable broth or coconut milk.
Easy Indian Vegetable Curry Recipe
Ingredients:
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 2 cups mixed vegetables (such as potatoes, carrots, bell peppers, peas, cauliflower, and green beans), chopped into bite-sized pieces
- 1 can (400g) diced tomatoes OR 1 cup coconut milk
- 1 cup vegetable broth or water
- Salt and pepper to taste
- Fresh cilantro leaves for garnish (optional)
- Cooked rice or naan bread for serving
Instructions:
- Prepare the Vegetables:
- Wash, peel (if necessary), and chop the vegetables into bite-sized pieces. You can use any combination of vegetables you like or have on hand.
- Sauté the Aromatics:
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the chopped onion to the skillet and cook for 2-3 minutes until softened.
- Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
- Add Spices:
- Add the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper to the skillet. Stir well to coat the onions and aromatics with the spices. Cook for 1 minute until the spices are fragrant.
- Cook the Vegetables:
- Add the chopped mixed vegetables to the skillet and stir to coat them with the spice mixture.
- Pour in the diced tomatoes with their juices OR coconut milk, along with the vegetable broth or water. Stir to combine.
- Cover the skillet and let the vegetables simmer for about 15-20 minutes, or until they are tender.
- Adjust Seasoning:
- Taste the curry and adjust the seasoning with salt and pepper as needed. If you prefer a spicier curry, you can add more cayenne pepper at this stage.
- Serve:
- Once the vegetables are cooked through and the curry has thickened to your liking, remove the skillet from heat.
- Garnish the Indian Vegetable Curry with fresh cilantro leaves, if desired.
- Serve hot with cooked rice or naan bread on the side.
