I recently made Indonesian Gado-Gado, and it was a vibrant and delicious dish! This traditional Indonesian salad is packed with fresh vegetables, tofu, and hard-boiled eggs, all drizzled with a rich peanut sauce. Here’s how to make it:

Ingredients:​

For the Salad:​

  • 2 cups shredded cabbage 🥬
  • 2 cups bean sprouts
  • 2 carrots, julienned 🥕
  • 1 cucumber, sliced 🥒
  • 1 cup green beans, trimmed and blanched
  • 2 potatoes, boiled and sliced
  • 1 block firm tofu, cubed and fried
  • 4 hard-boiled eggs, halved 🥚
  • 1/2 cup fried shallots (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped

For the Peanut Sauce:​

  • 1 cup roasted peanuts 🥜
  • 2 cloves garlic, minced 🧄
  • 1-2 red chilies, chopped (adjust to taste)
  • 1/4 cup tamarind paste
  • 1/4 cup palm sugar (or brown sugar)
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 2 tablespoons soy sauce
  • Juice of 1 lime
  • Salt, to taste

Instructions:​

  1. Prepare the Peanut Sauce:
    • In a food processor or blender, combine the roasted peanuts, garlic, red chilies, tamarind paste, palm sugar, coconut milk, water, and soy sauce. Blend until smooth. Adjust the consistency with more water if needed. Transfer to a bowl and stir in the lime juice and salt to taste.
  2. Prepare the Tofu:
    • Heat a bit of oil in a skillet over medium heat. Add the cubed tofu and fry until golden brown on all sides. Remove from heat and set aside.
  3. Blanch the Vegetables:
    • Bring a pot of water to a boil. Blanch the green beans for 2-3 minutes until tender-crisp, then transfer to a bowl of ice water to stop the cooking. Drain and set aside.
  4. Assemble the Salad:
    • On a large platter, arrange the shredded cabbage, bean sprouts, julienned carrots, sliced cucumber, blanched green beans, boiled potato slices, fried tofu, and halved hard-boiled eggs.
  5. Add Toppings:
    • Sprinkle the fried shallots (if using), chopped cilantro, and chopped basil over the salad.
  6. Serve:
    • Drizzle the peanut sauce generously over the salad. Serve extra peanut sauce on the side for dipping or additional drizzling. Mix the salad just before eating to ensure every bite is coated with the flavorful sauce.
