Fasolakia Yiahni is a traditional Greek green bean stew that’s simmered slowly in tomatoes, olive oil, and aromatic herbs, creating a dish that’s as comforting as it is flavorful. Perfect for a plant-based meal that tastes like a Mediterranean escape!
*Ingredients:*
- 1 lb green beans (trimmed)
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 2 potatoes (cubed)
- 1 can crushed tomatoes
- ½ cup olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley and dill for garnish
*Instructions:*
1. In a large pot, heat olive oil and sauté the onion, garlic, and potatoes until softened.
2. Add green beans, crushed tomatoes, oregano, and enough water to cover.
3. Simmer for 30–40 minutes until beans and potatoes are tender.
