For the Cake:
- 1 cup (225g) unsalted butter, cubed
- 8 ounces (225g) dark chocolate, chopped
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 orange
- 1 cup (125g) all-purpose flour
- Pinch of salt
- Juice of 2 oranges
- 1/4 cup (50g) granulated sugar
- 1 cup (240ml) heavy cream
- 8 ounces (225g) dark chocolate, chopped
- Zest of 1 orange
- Fresh orange slices (optional)
- Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.
- In a heatproof bowl set over a pot of simmering water, melt the butter and chopped dark chocolate together, stirring until smooth. Remove from heat and let it cool slightly.
- In a separate bowl, whisk together the sugar, eggs, vanilla extract, and orange zest until well combined.
- Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and glossy.
- Sift in the flour and salt, then gently fold the dry ingredients into the chocolate mixture until just combined.
- Pour the batter into the prepared cake pan and spread it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center is still slightly gooey.
- While the cake is baking, prepare the orange syrup. In a small saucepan, combine the orange juice and sugar. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and set aside to cool.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
- While the cake is cooling, prepare the chocolate ganache. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
- Once the cake has cooled, brush the top with the orange syrup, allowing it to soak into the cake.
- Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
- Garnish with orange zest and fresh orange slices, if desired.
- Chill the gateau in the refrigerator for at least 1 hour before serving to allow the ganache to set.
- Slice and serve this heavenly Fudgy Chocolate and Orange Gateau to delight your taste buds with its luxurious flavors!
