Ingredients:
- 4 boneless, skinless chicken breasts, frozen
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon (juice and zest)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Prepare Ingredients: Start by dicing the onion, mincing the garlic, and zesting and juicing the lemon.
- Sauté: Set the Instant Pot to "Sauté" mode. Add the olive oil to the pot and let it heat up. Once hot, add the diced onion and minced garlic. Sauté until softened and fragrant, about 2-3 minutes.
- Add Chicken: Add the frozen chicken breasts to the Instant Pot on top of the onions and garlic.
- Season: Season the chicken with salt, pepper, dried thyme, and the zest of the lemon.
- Liquid: Pour in the chicken broth and lemon juice.
- Pressure Cook: Close the Instant Pot lid and set the valve to the sealing position. Cook on high pressure for 10 minutes.
- Release Pressure: Once the cooking cycle is complete, allow a natural pressure release for 5 minutes, then carefully quick release any remaining pressure.
- Orzo: Open the Instant Pot and add the orzo pasta. Stir well to combine.
- Cook Orzo: Close the lid again and set the Instant Pot to "Manual" mode for 4 minutes on high pressure.
- Serve: Once the cooking cycle is complete, carefully release the pressure manually. Open the lid and stir the orzo and chicken together. Taste and adjust seasoning if needed.
- Garnish: Garnish with chopped fresh parsley if desired, and serve hot.
