Hey everyone! I’ve been experimenting with my Instant Pot and found a fantastic way to make ribs that are super tender and full of flavor. Thought I’d share the recipe here for anyone else who loves a quick and delicious meal!

Ingredients:

  • 2 racks of baby back ribs
  • 1 tablespoon olive oil
  • 1 cup barbecue sauce (your favorite kind)
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional, for some heat)
Instructions:

  1. Prepare the Ribs: Remove the membrane from the back of the ribs if it’s still attached. This helps them become more tender.
  2. Season: In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub this spice mix all over the ribs.
  3. Sauté: Set your Instant Pot to the ‘Sauté’ function and heat the olive oil. Once hot, sear the ribs on each side for about 2-3 minutes until nicely browned. You might need to do this in batches depending on the size of your Instant Pot.
  4. Add Liquid: After searing, pour in the apple cider vinegar and water. Scrape the bottom of the pot to deglaze and get all those flavorful bits off.
  5. Cook: Place the ribs in the Instant Pot, stacking them if necessary. Lock the lid and set the pot to ‘Manual’ or ‘Pressure Cook’ on high for 25 minutes.
  6. Natural Release: Once the cooking time is up, let the pressure release naturally for about 10 minutes, then do a quick release to release any remaining pressure.
  7. Glaze (Optional): If you like a caramelized glaze, brush the cooked ribs with barbecue sauce and broil them in the oven for 5-7 minutes, until the sauce is bubbly and slightly charred.
  8. Serve: Let the ribs rest for a few minutes before cutting them into individual portions. Enjoy!
