Ingredients:
- For the Soda Bread:
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/4 cup brewed strong coffee (cooled)
- 1 large egg
- 1/4 cup melted butter
- For the Bread Pudding:
- 6 cups cubed Irish soda bread (or other rustic bread)
- 1 cup whole milk
- 1 cup heavy cream
- 1 cup brewed strong coffee (hot or cold)
- 1/2 cup Irish whiskey or Irish cream liqueur
- 4 large eggs
- 3/4 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup chocolate chips or chopped dark chocolate (optional)
- For Serving (Optional):
- Whipped cream or vanilla ice cream
- A drizzle of caramel sauce or chocolate sauce
Instructions:
- Make the Soda Bread:
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- In another bowl, mix the buttermilk, brewed coffee, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be thick.
- Transfer the dough to the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
- Prepare the Bread Pudding:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or a similar-sized dish.
- Cut the cooled soda bread into cubes and place them in the prepared baking dish.
- In a large bowl, whisk together the milk, heavy cream, brewed coffee, Irish whiskey or Irish cream liqueur, eggs, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Pour the custard mixture over the bread cubes, gently pressing down to ensure all the bread is soaked. Let it sit for 15-30 minutes, or cover and refrigerate overnight for best results.
- Fold in the chocolate chips or chopped dark chocolate, if using.
- Bake:
- Bake in the preheated oven for 45-50 minutes, or until the pudding is set in the center and the top is golden brown. A knife inserted into the center should come out clean.
- Cool and Serve:
- Allow the bread pudding to cool for a few minutes before serving.
- Serve warm with optional whipped cream, vanilla ice cream, or a drizzle of caramel or chocolate sauce.
