Ingredients:​

  • For the Soda Bread:
    • 3 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 cup buttermilk
    • 1/4 cup brewed strong coffee (cooled)
    • 1 large egg
    • 1/4 cup melted butter
  • For the Bread Pudding:
    • 6 cups cubed Irish soda bread (or other rustic bread)
    • 1 cup whole milk
    • 1 cup heavy cream
    • 1 cup brewed strong coffee (hot or cold)
    • 1/2 cup Irish whiskey or Irish cream liqueur
    • 4 large eggs
    • 3/4 cup granulated sugar
    • 1/2 cup brown sugar (packed)
    • 1 tsp vanilla extract
    • 1 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • 1/4 tsp salt
    • 1/2 cup chocolate chips or chopped dark chocolate (optional)
  • For Serving (Optional):
    • Whipped cream or vanilla ice cream
    • A drizzle of caramel sauce or chocolate sauce

Instructions:​

  1. Make the Soda Bread:
    • Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
    • In a large bowl, whisk together the flour, sugar, baking soda, and salt.
    • In another bowl, mix the buttermilk, brewed coffee, egg, and melted butter.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be thick.
    • Transfer the dough to the prepared loaf pan and smooth the top.
    • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
  2. Prepare the Bread Pudding:
    • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or a similar-sized dish.
    • Cut the cooled soda bread into cubes and place them in the prepared baking dish.
    • In a large bowl, whisk together the milk, heavy cream, brewed coffee, Irish whiskey or Irish cream liqueur, eggs, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
    • Pour the custard mixture over the bread cubes, gently pressing down to ensure all the bread is soaked. Let it sit for 15-30 minutes, or cover and refrigerate overnight for best results.
    • Fold in the chocolate chips or chopped dark chocolate, if using.
  3. Bake:
    • Bake in the preheated oven for 45-50 minutes, or until the pudding is set in the center and the top is golden brown. A knife inserted into the center should come out clean.
  4. Cool and Serve:
    • Allow the bread pudding to cool for a few minutes before serving.
    • Serve warm with optional whipped cream, vanilla ice cream, or a drizzle of caramel or chocolate sauce.
