  • 1/4 cup granulated sugar
  • 1 cup water
  • Potato starch or cornstarch, for dusting
Instructions:
  1. Prepare the Matcha Filling:
    • In a small bowl, combine the sweetened red bean paste (anko) with the matcha green tea powder. Mix until well combined and smooth. Adjust the amount of matcha powder to taste, depending on your preference for intensity of flavor. Set aside.
  2. Make the Mochi Dough:
    • In a microwave-safe bowl, whisk together the glutinous rice flour (mochiko), granulated sugar, and water until smooth.
    • Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove from the microwave and stir the mixture with a wet spatula or spoon.
    • Return the bowl to the microwave and microwave for an additional 1 minute. Stir again.
    • Microwave for a final 30 seconds, or until the mochi dough is thick and sticky.
  3. Form the Mochi:
    • Dust a clean work surface or cutting board with potato starch or cornstarch.
    • Transfer the hot mochi dough onto the dusted surface and allow it to cool slightly until it is safe to handle.
    • Divide the mochi dough into equal-sized portions and flatten each portion into a small disc with your fingers or a rolling pin.
  4. Assemble the Mochi:
    • Place a small amount of matcha filling in the center of each mochi disc.
    • Carefully gather the edges of the mochi disc to enclose the filling and pinch to seal, forming a ball or dumpling shape.
    • Roll the filled mochi balls in your hands to smooth out any seams and shape them into round balls.
