Ingredients:

For the Teriyaki Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake (or dry white wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
For the Salmon:

  • 4 salmon fillets
  • Salt and pepper, to taste
  • Vegetable oil, for cooking
For the Stir-Fried Vegetables:

  • 1 tablespoon vegetable oil
  • 2 cups mixed vegetables (such as bell peppers, broccoli, carrots, and snap peas), sliced
  • Salt and pepper, to taste
For Serving:

  • Cooked white rice
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish
  • Pickled ginger (optional)
Instructions:

  1. In a small saucepan, combine soy sauce, mirin, sake, brown sugar, honey, minced garlic, and grated ginger to make the teriyaki sauce. Bring the mixture to a simmer over medium heat, stirring occasionally.
  2. If desired, whisk in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the sauce has thickened slightly. Remove from heat and set aside.
  3. Season the salmon fillets with salt and pepper on both sides.
  4. Heat vegetable oil in a large skillet or grill pan over medium-high heat. Add the salmon fillets to the skillet, skin side down, and cook for 3-4 minutes, or until the skin is crispy and golden brown.
  5. Flip the salmon fillets and brush the tops generously with teriyaki sauce. Cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. While the salmon is cooking, heat vegetable oil in a separate skillet or wok over high heat for stir-frying the vegetables.
  7. Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, or until they are crisp-tender. Season with salt and pepper to taste.
  8. To assemble the rice bowls, divide cooked white rice among serving bowls. Top each bowl with teriyaki-glazed salmon fillets and stir-fried vegetables.
  9. Drizzle additional teriyaki sauce over the salmon and vegetables.
  10. Garnish the rice bowls with sesame seeds and sliced green onions. Serve with pickled ginger on the side, if desired.
