- 2 cups long-grain parboiled rice
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 ripe tomatoes, blended
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/4 cup vegetable oil
- 2 cups chicken or vegetable broth
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: cooked chicken, shrimp, or vegetables for added protein and flavor
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until softened.
- Stir in the chopped bell peppers and continue to cook for a few minutes until they start to soften.
- Add the blended tomatoes to the pot and cook until the mixture thickens and the oil starts to separate from the sauce, about 10-15 minutes.
- Stir in the thyme, curry powder, paprika, salt, and pepper. Adjust the seasoning to your taste.
- Add the parboiled rice to the pot and stir until it's well coated with the tomato mixture.
- Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the rice simmer for about 20-25 minutes, or until it's cooked through and fluffy.
- If desired, add cooked chicken, shrimp, or vegetables to the rice during the last few minutes of cooking.
