Katsu Kare combines crispy pork cutlets with rich, flavorful curry over rice, creating a comforting and satisfying meal. This Japanese favorite is perfect for when you’re craving something hearty and delicious, with the crispy pork adding a delightful crunch to the creamy curry sauce.

🍚 **Ingredients**:
- 2 cups cooked rice
- 2 pork cutlets (tonkatsu), breaded and fried
- 1 onion, chopped
- 2 carrots, sliced
- 1 potato, peeled and diced
- 2 tbsp curry powder
- 1 tbsp soy sauce
- 1 tbsp ketchup
- 2 cups chicken or vegetable broth
- 2 tbsp vegetable oil

🍛 **Instructions**:
1. In a pot, heat vegetable oil over medium heat and sauté onion until translucent.
2. Add carrots and potato, cooking for a few minutes before adding curry powder, soy sauce, and ketchup.
3. Pour in the chicken or vegetable broth and simmer until vegetables are tender, about 15 minutes.
4. Slice the cooked pork cutlets into strips and place on top of cooked rice.
5. Spoon the curry sauce over the pork and rice, and serve hot for a hearty, comforting meal!
