Ingredients:

- 1 cup heavy cream
- 1/4 cup granulated erythritol or monk fruit sweetener (adjust to taste)
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
For Garnish (Optional):
- Sugar-free chocolate shavings or chips
- Whipped cream (unsweetened or sweetened with a keto-friendly sweetener)
- Chopped peanuts
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Crust:
- In a medium bowl, mix together the almond flour, erythritol (or monk fruit sweetener), melted butter, vanilla extract, and a pinch of salt until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust.
- Bake the Crust:
- Bake in the preheated oven for 10-12 minutes, or until the crust is golden brown. Allow it to cool completely before adding the filling.
- Prepare the Filling:
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the peanut butter, erythritol (or monk fruit sweetener), and vanilla extract. Mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the peanut butter mixture until fully combined and smooth.
- Assemble the Pie:
- Spoon the peanut butter filling into the cooled crust and smooth the top with a spatula.
- Chill:
- Refrigerate the pie for at least 2 hours, or until set. For best results, chill overnight.
- Garnish and Serve:
- Before serving, garnish with sugar-free chocolate shavings or chips, whipped cream, and chopped peanuts if desired.
Tips:
- Sweetener: Adjust the amount of erythritol or monk fruit sweetener in the filling based on your taste preference. Some sweeteners are sweeter than others, so you may need to taste and adjust.
- Peanut Butter: Use a creamy, unsweetened peanut butter for the best texture and flavor.
