Treat yourself to the savory and aromatic flavors of Thai Shrimp Paste Fried Rice, Khao Kluk Kapi!
**Ingredients**:
- 3 cups cooked jasmine rice, chilled
- 2 tbsp shrimp paste
- 2 cloves garlic, minced
- 2 eggs, beaten
- 200g pork, thinly sliced
- 1/2 cup shrimp, peeled and deveined
- 1/4 cup vegetable oil
- 1/4 cup diced onion
- 1/2 cup diced green beans
- 1/4 cup diced carrot
- 1/4 cup diced bell pepper
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1/2 lime, cut into wedges
**Garnishes**:
- 1/2 cup sliced cucumber
- 1/4 cup shredded green mango
- 1/4 cup chopped green onions
- 1 red chili, sliced
- Fresh cilantro leaves
**Instructions**:
1. Heat the vegetable oil in a wok or large pan over medium heat.
2. Add minced garlic and diced onion, stir-frying until fragrant.
3. Add shrimp paste and stir-fry until it becomes fragrant.
4. Push the garlic and onion to one side of the pan, pour in the beaten eggs, and scramble until cooked.
5. Add the sliced pork and shrimp, cooking until both are fully cooked.
6. Toss in the diced green beans, carrot, and bell pepper, stir-frying until tender-crisp.
7. Add the chilled jasmine rice, breaking up any clumps, and mix well with the other ingredients.
8. Season with fish sauce and sugar, adjusting to taste. Stir-fry until everything is well combined and heated through.
9. Serve the fried rice hot, garnished with sliced cucumber, shredded green mango, chopped green onions, sliced red chili, and fresh cilantro leaves. Add lime wedges on the side.
