Ingredients
- 2 cups cooked rice (preferably day-old)
- 1 cup kimchi, chopped (plus some juice for extra flavor)
- 2 tablespoons vegetable oil (or sesame oil for extra flavor)
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (like peas, carrots, or bell peppers)
- 2 eggs (optional)
- 2-3 green onions, chopped
- Soy sauce (to taste)
- Sesame seeds (for garnish)
- Optional: protein of choice (tofu, chicken, or shrimp)
Instructions
- Prepare the Ingredients: Make sure your rice is cooked and cooled (day-old rice works best). Chop the kimchi and any vegetables you’re using.
- Cook the Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent.
- Add Vegetables and Kimchi: Stir in the mixed vegetables and kimchi. Cook for about 2-3 minutes until the vegetables are tender and the kimchi is heated through.
- Add Rice: Add the cooked rice to the skillet. Use a spatula to break up any clumps and stir everything together. Cook for another 3-4 minutes, allowing the rice to fry slightly.
- Add Soy Sauce: Drizzle soy sauce over the rice to taste, and mix well. If you like, add some of the kimchi juice for extra flavor.
- Cook the Eggs (Optional): If using eggs, push the rice to one side of the skillet. Crack the eggs into the empty space and scramble them until cooked, then mix them into the rice.
- Finish and Serve: Stir in the chopped green onions and remove from heat. Serve hot, garnished with sesame seeds.
