Ingredients:

For the Marinated Beef:

  • 8 ounces beef sirloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 green onion, thinly sliced
For the Bibimbap:

  • 4 cups cooked short-grain white rice
  • 2 tablespoons vegetable oil
  • 2 cups assorted vegetables (such as spinach, carrots, zucchini, mushrooms, and bean sprouts), thinly sliced or julienned
  • 4 eggs
  • Salt and pepper, to taste
  • Gochujang (Korean red pepper paste), for serving
  • Toasted sesame seeds, for garnish
  • Thinly sliced green onions, for garnish
  • Kimchi and pickled radishes, for serving (optional)
Instructions:

  1. In a bowl, combine thinly sliced beef sirloin, soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and thinly sliced green onion. Toss to coat the beef evenly in the marinade. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef slices and stir-fry until cooked through and slightly caramelized, about 3-4 minutes. Remove from heat and set aside.
  3. In the same skillet, add a little more vegetable oil if needed. Stir-fry assorted vegetables individually or together until tender-crisp, seasoning with salt and pepper to taste. Remove from heat and set aside.
  4. In a separate non-stick skillet, fry the eggs sunny-side up or over-easy, until the whites are set and the yolks are still runny. Season with salt and pepper.
  5. To assemble the bibimbap, divide the cooked rice among serving bowls. Arrange the cooked marinated beef and sautéed vegetables on top of the rice, leaving space for the fried egg.
  6. Place a fried egg on top of each bowl of bibimbap.
  7. Serve the Korean-Inspired Bibimbap hot, with a dollop of gochujang on the side for each serving. Sprinkle with toasted sesame seeds and thinly sliced green onions for garnish.
