Lamb and Cheese Stuffed Pitas

- 2 lamb chops, boneless and cut into small cubes
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese (or goat cheese)
- 4 small pita breads
- 1 cup mixed greens (optional)
- 2 tablespoons tzatziki sauce (optional)
- Heat olive oil in a pan over medium heat. Add chopped onion and garlic. Sauté until softened.
- Add the lamb cubes, cumin, paprika, salt, and pepper. Cook until the lamb is browned and cooked through (about 8-10 minutes).
- Remove the pan from heat and let the lamb cool slightly.
- Once cooled, mix the lamb with crumbled feta cheese.
- Warm the pitas in a dry pan or microwave.
- Stuff each pita with the lamb and cheese mixture, and add mixed greens and a drizzle of tzatziki sauce if desired.
- Serve immediately and enjoy!
