- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- Salt and pepper, to taste
- Vegetable oil, for frying
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- Salt, to taste
- Pita bread
- Sliced tomatoes
- Sliced cucumbers
- Sliced red onion
- Shredded lettuce
- Pickled turnips (optional)
- Chopped parsley, for garnish
- Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, chopped onion, garlic, parsley, cilantro, ground cumin, ground coriander, baking powder, salt, and pepper. Pulse until the mixture is finely ground but not pureed, scraping down the sides as needed.
- Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 1 hour to firm up.
- While the falafel mixture is chilling, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth. Adjust the consistency with more water if needed. Set aside.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Using wet hands, shape the falafel mixture into small balls or patties, about 1 1/2 inches in diameter.
- Carefully place the falafel balls or patties into the hot oil, frying in batches to avoid overcrowding the skillet. Fry until golden brown and crispy, about 4-5 minutes. Remove from the oil and drain on paper towels.
- Warm the pita bread in a dry skillet or microwave.
- To assemble the wraps, spread a dollop of tahini sauce onto each pita bread. Add a few falafel balls or patties, sliced tomatoes, sliced cucumbers, sliced red onion, shredded lettuce, and pickled turnips, if using.
