I recently made Lebanese Sfouf, and it was such a delightful treat! This simple yet flavorful turmeric cake has a beautiful golden hue, a slightly nutty flavor, and the perfect balance of sweetness. Plus, it’s eggless, which makes it super light! The best part? It pairs wonderfully with a cup of tea or coffee. ☕✨

Ingredients:

  • 2 cups semolina
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 cup milk (or water for a dairy-free version)
  • 1 teaspoon turmeric powder
  • 1 tablespoon baking powder
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons tahini (to grease the pan)
  • ¼ cup pine nuts or slivered almonds (for topping)

Instructions:

1. Preheat & Prep:
Preheat your oven to 350°F (175°C). Grease a baking dish (9x9 inches) with tahini—this adds a subtle nutty flavor and prevents sticking.

2. Mix the Dry Ingredients:
In a bowl, whisk together semolina, flour, sugar, turmeric, and baking powder.

3. Add the Wet Ingredients:
Pour in milk, oil, and vanilla extract (if using). Stir until you get a smooth, thick batter.

4. Pour & Top:
Transfer the batter to the greased baking dish. Sprinkle pine nuts or almonds on top.

5. Bake:
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes before slicing into squares or diamonds.

Conclusion:

Sfouf is such an easy and one-bowl cake, yet it feels special every time! The turmeric gives it a unique warmth, and the texture is beautifully crumbly yet moist. If you’re craving a quick, fuss-free dessert, this Lebanese classic is a must-try! 🍰💛
