Here's a recipe for Lechon Kawali, a Filipino crispy pork belly dish:

- 2 pounds pork belly, skin on, cut into 2-inch cubes
- 6 cloves garlic, crushed
- 2 bay leaves
- 1 tablespoon salt
- 1 teaspoon whole peppercorns
- Water for boiling
- Cooking oil for deep-frying
- In a large pot, combine the pork belly cubes, crushed garlic, bay leaves, salt, and whole peppercorns.
- Add enough water to cover the pork belly, then bring the water to a boil over high heat.
- Reduce the heat to low and simmer the pork belly for about 45 minutes to 1 hour, or until the meat is tender.
- Remove the pork belly from the pot and drain excess liquid. Let it cool for a few minutes.
- Heat cooking oil in a deep fryer or a large pot to 350°F (175°C).
- Carefully lower the cooked pork belly cubes into the hot oil and deep-fry until the skin is golden and crispy, about 8-10 minutes. Be cautious as the oil may splatter.
- Once the pork belly is crispy and golden brown, remove it from the oil and let it drain on a wire rack or paper towels to remove excess oil.
- Serve the crispy Lechon Kawali hot with your favorite dipping sauce or side dishes such as steamed rice and vinegar dipping sauce with chopped onions and chili peppers.
