- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
- In a mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Gradually add in the 2 cups of flour and mix until well combined. Press the dough evenly into the bottom of the prepared baking pan.
- Bake the crust in the preheated oven for 20-25 minutes, or until lightly golden brown.
- While the crust is baking, prepare the lemon filling. In another mixing bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, 1/4 cup flour, baking powder, and salt until smooth.
- Once the crust is baked, remove it from the oven and pour the lemon filling over the hot crust.
- Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden brown.
- Allow the lemon bars to cool completely in the pan before slicing into squares.
- Dust the tops of the lemon bars with powdered sugar before serving.
