Lemon Cake Recipe

    • 1 cup (2 sticks) unsalted butter, softened
    • 1 1/2 cups sugar
    • 4 large eggs
    • 2 1/2 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup buttermilk
    • 2 tablespoons lemon zest (from about 2 lemons)
    • 1/4 cup fresh lemon juice
  • For the glaze:
    • 1 cup powdered sugar
    • 2 tablespoons fresh lemon juice

Instructions​

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Cream the butter and sugar together in a large bowl until light and fluffy. This should take about 3-5 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Stir in the lemon zest and lemon juice until evenly distributed.
  7. Pour the batter into the prepared baking pan. Smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Make the glaze by mixing the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.
