Lemon Garlic Butter Shrimp

Hey everyone! Sharing something that can spice up your dinner that won't take up your time. It's one of those recipes that's not only mouthwateringly delicious but also super easy to whip up on a busy weeknight.

Ingredients:​

  • 1 lb (450g) large shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/4 cup chicken broth or white wine (optional)
  • Juice of 1 lemon
  • 4 tablespoons unsalted butter
  • 1 teaspoon red pepper flakes (optional for heat)
  • 2 tablespoons freshly chopped parsley
  • Lemon slices, for garnish

Instructions:​

  1. Prep the Shrimp: Season the shrimp with salt and pepper. Make sure they're dry to get a nice sear.
  2. Cook the Garlic: Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Sauté the Shrimp: Increase the heat to medium-high. Add the shrimp to the pan in a single layer, working in batches if necessary. Cook for about 1-2 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the pan and set aside.
  4. Deglaze: (Optional) Pour chicken broth or white wine into the pan. Let it simmer for 2-3 minutes, scraping up any bits from the bottom of the pan.
  5. Add Flavor: Reduce the heat to low. Stir in the lemon juice, butter, and red pepper flakes (if using). Continue to stir until the butter is melted and the sauce is smooth.
  6. Combine: Return the shrimp to the pan. Toss well to coat in the sauce and reheat the shrimp.
  7. Garnish and Serve: Sprinkle with chopped parsley and garnish with lemon slices. Serve immediately.
