Lemon Garlic Roasted Asparagus

Ingredients:
  • 1 bunch of fresh asparagus
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Salt and pepper to taste
Instructions:
  1. Preheat your oven to 425°F (220°C).
  2. Wash the asparagus spears and trim off the woody ends.
  3. In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper.
  4. Place the asparagus spears on a baking sheet lined with parchment paper.
  5. Drizzle the lemon garlic mixture over the asparagus and toss to coat evenly.
  6. Spread the asparagus out in a single layer on the baking sheet.
  7. Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly charred, stirring halfway through.
  8. Remove from the oven and serve hot.
Notes:
  • You can adjust the amount of garlic and lemon to suit your taste preferences.
