Ingredients:
- 1 cup granulated sugar
- 1/4 cup cornstarch
- Pinch of salt
- 1 1/2 cups water
- 3 large egg yolks
- 1 tablespoon grated lemon zest
- 1/2 cup fresh lemon juice
- 2 tablespoons unsalted butter
- Whipped cream, for serving (optional)
- Fresh berries, for garnish (optional)
- Mint leaves, for garnish (optional)
Instructions:
1. In a saucepan, whisk together the granulated sugar, cornstarch, and salt.
2. Gradually whisk in the water until smooth.
3. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
4. Once the mixture begins to thicken, reduce the heat to low.
5. In a separate bowl, lightly beat the egg yolks.
6. Gradually whisk in about 1/2 cup of the hot sugar mixture into the beaten egg yolks to temper them, then pour the egg mixture back into the saucepan with the remaining sugar mixture, whisking constantly.
7. Cook the pudding mixture over low heat, stirring constantly, until thickened, about 2-3 minutes.
8. Remove from heat and stir in the grated lemon zest, fresh lemon juice, and unsalted butter until smooth and well combined.
9. Pour the lemon pudding into serving dishes or ramekins.
10. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
11. Refrigerate for at least 2 hours, or until chilled and set.
