I made this lentil avocado salad for lunch, and it’s so filling and fresh! Packed with protein and flavor.

Ingredients:

  • 1 cup cooked lentils (cooled)
  • 1 ripe avocado, diced
  • 1/2 cucumber, chopped
  • 1/2 red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)
Instructions:

  1. In a large bowl, combine the lentils, avocado, cucumber, red onion, and cherry tomatoes.
  2. Drizzle with olive oil and lemon juice, then toss gently to combine.
  3. Season with salt and pepper, and garnish with fresh herbs if desired.
