Hey foodies! I wanted to share my favorite lentil recipe that's perfect for a cozy meal. It's hearty, healthy, and super easy to make. Hope you love it as much as I do!

- 1 cup green or brown lentils, rinsed
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (optional)
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until fragrant and translucent.
- Add the carrots, celery, and bell pepper. Cook for about 5-7 minutes until they start to soften.
- Stir in the lentils, diced tomatoes, vegetable broth, bay leaf, thyme, and smoked paprika. Bring to a boil.
- Reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste. Remove the bay leaf.
- Serve hot, garnished with fresh parsley if desired.
